Sooooooooo, I am sure that everyone loves a classic cookie, but do you know what makes everything 1000x better?? Salted Caramel.
Since this is quite a rich snack, one of the best ways i have found to portion control, is just to make smaller batches of everything!! So this recipe will only make 9 – 6 cookies, (depending on the size)
You can either use melted or softened butter, I find that melted butter creates more of a chewy cookie, whereas, what i prefer is to use the softened butter, as it creates more of a thicker and more cake like cookie.
From then on its pretty straight forward, its a lot like your normal cookie recipe…………..and then, you get to go crazy with the chocolate!! Use whichever one you like, i used dark chocolate chips and then a couple pieces of chocolate from a bar that was layered ; milk, white and then dark!!! what?! just go crazy and make it to your liking 🙂
The next part is to add the salted caramel! so you could literally just mix the salted caramel into the batter, but i wanted a salted caramel core to my cookie. So i placed the salted caramel into a piping bag (use a zip lock bag & snip the corner off to create a makeshift piping bag), and i started to pipe small coin sized dollops onto a tray lined with parchment paper + then placed the whole tray in the freezer, to freeze the caramel dollops.
After freezing the dollops, to give your cookies a caramel core, just place a small dollop in a rolled ball of cookie dough, and bake as you would!!
And then bake them off & ENJOY!!!!!
COOKIE BATTER : 3 tbsp softened / melted butter 1/4 cup brown sugar (packed) 3/4 tsp vanilla extract 1/2 cup All-purpose flour 1 large Egg Yolk a large pinch Baking Soda a pinch Salt 1/2 cup Chocolate chips
COOKIE BATTER : 1. Preheat oven to 350*f 2. Cream together butter and sugar in a mixing bowl 3. Add in egg yolk, and vanilla extract, continue to mix 4. Sift in baking soda, flour and salt, and fold. 4. Fold in chocolate chips. 5. Cover batter and refrigerate for 15-20 mins. 6. Use a tablespoon to roll into balls, + add in a frozen dollop of salted caramel. 8. Place on a parchment paper lined cookie sheet 9. Bake for 9-11 mins in a 350*f oven, until golden brown 10. Allow to cool before serving!!
SALTED CARAMEL : 2 tbsp Salted butter 1/4 cup Light Brown sugar (packed) 1/4 cup White granulated sugar 1/4 cup Heavy cream 1/4 tsp Sea salt / Kosher Salt 1/4 tsp Vanilla extract (optional)
SALTED CARAMEL : 1. Place the sugars, into a heavy bottomed saucepan over medium heat. 2. Once the sugar begins to melt, pour in cream, and whisk continuously 3. Bring the mixture to a rolling boil for 1 min, then reduce the heat and continue to stir for 3 mins. 4. Remove the heat, and whisk in the butter 5. Wait for the mixture to cool, and add the salt and vanilla.
